Fredericton Bakery Brings a Modern Twist to Cake Design
FREDERICTON – Lennon Cake Co. is a small, Fredericton cake business that specializes in unique and modern cake designs. Mackalee Goodman opened the business roughly two years ago; she says she is shocked and forever thankful for what Lennon Cake Co. has become.
About two years ago, Goodman and her family were living in Montreal during the pandemic and lockdowns. Having young kids of her own, she wanted to ensure they would still have a fun birthday celebration, regardless of the restrictions in place.
“I taught myself how to bake, how to decorate a cake, just so they would have something special on [their birthday]. Since then I’ve been baking cakes and celebrating all these parties and birthdays and I guess that’s where that started,” Goodman tells Huddle.
Goodman says she started turning this newfound passion into a business following her move back to New Brunswick in the fall of 2021. With the help of her friends, news of Lennon Cake Co. spread around the province.
“Through word of mouth, it kind of blew up like wildfire,” she says. “Vendors and venues started reaching out to me [from] all over New Brunswick and I didn’t know this was going to happen, I thought I was just like a home baker but I’m so grateful that it blew up that way.”
Goodman says what makes her cakes different is how she specializes in modern and abstract designs. She claims she is the only person in the area that specializes in this sort of design.
She says a lot of businesses in the same field tend to cater towards more character-inspired cakes for children, but she wanted to bring the market to an older audience. Although she will always do a kids birthday party or event, her heart is with more modern styled designs.
“I like adding a little bit of spice to [designing cakes] and making it more unique,” says Goodman.
Lennon Cake Co. makes cakes for all sorts of events. These include things such as kids’ birthday parties, weddings, baby showers, anniversaries, and really anything that can be imagined. Goodman says she tries to equal out the different events that she does, typically doing 15-25 events per week from all over New Brunswick.
Being the only person who decorates and bakes the cakes, with the occasional help from her husband, Goodman says that having such a high demand can at times be chaos. Regardless though, she loves the process.
“I’m going to need help in the future, we’ve been talking about getting an assistant to help me with social media and stuff like that,” Goodman tells Huddle.
Currently, Lennon Cake Co. is run completely out of Goodman’s home and personal kitchen. However, she is searching for a commercial kitchen. This will allow her to have a potentially bigger kitchen where she can get more done in a less congested space.
Goodman creates a variety of items such as round cakes, layered cakes, cupcakes, and cakesicles. These can all be made in a variety of flavours, frostings, and even fillings.
Lennon Cake Co. is currently taking bookings via email and Facebook, but is working on creating an officially booking platform for more ease. She is currently booking big events such as weddings for 2024 and 2025, as well as smaller events that she tends to try and squeeze in as much as possible.
