540 Bar And Grill Opens Location In Fredericton’s Lighthouse
FREDERICTON — 540 Bar and Grill can already be found on both sides of the St. John River in Fredericton. Starting this July, their food and drink can be enjoyed even closer to the water.
“The Lighthouse by 540” is planning to open on Canada Day. General manager Jordon Profit hopes to get in a few soft openings before that date. He said that the owners of 540 have been interested in the new location for a few years.
“We always found that the lighthouse was underutilized,” said Profit. “It’s just such a great space but it never really had the draw or amount of people.”
They are planning to treat the new location like a beer garden. There will be a full patio where customers can enjoy food and drinks. Customers can also take their food to-go to eat on the green by the river.
“We put a nice concrete bar around the perimeter of the deck so you can sit there and look out at the water,” said Profit. “I’m really excited to see that full.”
540’s three locations are close together but there is something different about each one. Profit describes 540’s North side location at Picaroons as more of a permanent food truck while the South side comes with full table service.
“I like to think of The Lighthouse as the perfect blend between North and South,” said Profit.
The menu at the lighthouse will have a mix of staples from their North and South location like mac and cheese, nachos, and pork belly bowls.
The Lighthouse by 540 put a call out on its Facebook for people interested in applying to work in the kitchen or service at the new location.
“We have I’d say about 90 percent of the team but we are looking for a few more to join,” said Profit.
Profit is also hiring younger employees to staff their new canteen next to the lighthouse. The canteen, which used to be a bicycle rental shed, will sell ice cream, pop and chips.
“Every day I go in there it looks completely different,” said Profit. “It looks more and more like a restaurant and a bar all the time.”
