New Food Truck Brings The Beat To Fredericton
FREDERICTON — Kanye Eustache and Amanda Michaud like to listen to music while they cook, dancing around the kitchen with their two dogs. When designing their own food truck, they kept their love of music at the forefront.
Their food truck Beatz n Eatz is modelled after an old-school beatbox. Music plays on speakers outside and inside the truck located at 550 Queen Street, at the end of the alley between The Abbey and 540.
“After this year we all need something good for the soul and music and food combined, that’s perfect, that’s good for the soul,” said Amanda Michaud, one of the owners.
Her co-owner is her husband Kanye Eustache, who is Congolese and has worked in the service industry for over 15 years. Michaud, a Fredericton local, is in her 20th year working in the service industry. The couple has been dreaming of opening their own restaurant for nine years.
“We really pride ourselves on genuine superior customer service,” said Michaud.
As for food, Beatz n Eatz is not limiting themselves to one genre. Eustache said that mobile food trucks usually have one menu, but they will mix it up throughout the summer. Their goal is to change a few items on the menu every few weeks or so.
“Just to keep people excited and to introduce different foods or cuisines that you might not necessarily see around Fredericton and New Brunswick,” said Eustache.
Head Chef Julien Nsengiyumva describes their menu as street food with a twist. He moved from Rwanda in 2014 and went to St. Andrew’s culinary art school.
Since then he’s been working in Ottawa. Taking the head chef position at Beatz n Eatz allowed him to move back to Fredericton where his family had been living throughout the pandemic.
“[We are] trying to make sure everything on the menu is a little bit familiar but also a bit different,” said Nsengiyumva.
Dill Pickle Chicken strips are his take on a classic that is pickled and served with French onion aioli. This and the rest of their menu can be enjoyed across from The Lot Fredericton.
“The Lot made their patio communal this summer with the option to get taken from Naru, take out from The Abbey and take out from us, Beatz n Eatz,” said Michaud.
The large patio is Covid friendly and dog friendly with enough room to social distance.
